Quick and Easy Vegan Recipes You Can Enjoy Anytime!

Here is your weekly dose of Breakfast, Lunch & Dinner. Your fun weekly post of the delicious things we’re making and eating and the fun things we have going on.

This week I decided to feature Angela Liddon from Oh She Glows, we’ve featured Angela and her recipes before, but they’re so great we just had to share some more.

Angela has written and cooked some truly delicious meals! They all happen to be plant-based and what’s the most interesting part, is all her recipes leave you feeling satisfied and energized.

I actually love her recipes so much I bought her app on my iPhone. Now I have them at my fingertips and it makes preparing her recipes SUPER easy.

Do you make any plant-based meals?

If so which meal of the day, is it? I’m always curious to learn about our readers and what it is YOU like.

Hit REPLY to share with me.

Breakfast

Classic Cinnamon Rolls – Mmmmmm Yum!

I love a good cinnamon roll, especially when they’re warm, gooey and hot out of the oven… Mmmmm – Yum!

If you’re not typically a baker, this Classic Cinnamon Rolls recipe may seem like it’s out of your wheel house, but rest assured it’s not and you’ve got this!

Before you begin, be sure to read the recipe through first, then you can decide if you’re going to prep the night before and bake in the morning, or just give it a go all at once.

These make for a delightful Sunday pastry with your cup of coffee or espresso.

Lunch

Avocado Strawberry Caprese – LUNCH IN 10 MINUTES!

We’re getting into strawberry season and I’m so excited!

I absolutely LOVE fresh strawberries. There’s something so delicious about using them in salads and turning them into a savory delight that makes me happy.

This Avocado Strawberry Caprese Salad is so easy to toss together and makes for a great lunch if you’re on the go!

Dinner

Instant Pot Cauliflower Thai Curry – So EASY and Super Delicious

If you’re looking for a delicious meal that TASTES like someone has been standing over the pot stirring in your kitchen for hours, yet it really only took 20 MINUTES than this is the recipe for you.

This Cauliflower Thai Curry really knocked our socks off. It’s so flavorful and delicious you’ll want any leftovers all for yourself!

I served this over a bed of quinoa and brown rice made by Seeds of Change. You can certainly serve this over white rice, basmati rice or another grain that suits your fancy. And, to complement the taste of spice in your curry dish, this Piña Colada cocktail will be such a perfect addition to your meal of the day!

Thanks again for joining us on this fun journey.
