Eggplant Zucchini Bread

I know, you’re probably thinking WHAT???

Eggplant Bread? I promise I haven’t lost my mind.

The texture of eggplant really isn’t too different from zucchini and why not add this great veggie to a delicious Eggplant Zucchini Bread Recipe .

LOVE to eat a slice individually toasted in my toaster oven with a little butter or coconut oil spread over top. Who can resist those crunchy toasted edges?

NOTE: SUPER IMPORTANT – this recipe is for TWO loaves of bread, so you can cut it in half or make two and freeze one.

Broiled Eggplant Sandwich

Freshly toasted bread with an avocado schmear, cheese, cucumber, roasted red peppers, finely sliced red onions… need I say more?

I love all the different levels of flavors this sandwich gives. You could even “kick it up a notch,” as Emeril Lagasse would say, by adding some crispy bacon if you’d like.
